Pure honey never spoils and is innately antimicrobial due to its low moisture content when extracted properly. Bees know the best when to cap the honeycomb after they fan the nectar with their wings to dehydrate it. We only extract honey from fully capped honeycomb, which assures water content is around 17%. This makes fermentation of the honey simply impossible.

Our honey is 100% natural, raw and unfiltered. We extract it using a centrifuge and the honey is never heated above 40°C. We then pour the honey through a strainer to remove hard particles like wax, but not too fine to filter out the good stuff like pollen, which is high in amino acids, vitamins, minerals and antioxidants.

Our honey production method is traditional and zero waste. We uncap our honeycomb by hand for the best accuracy. Any honey that is lost during the process gets fed back to the bees. The wax cappings and old honeycomb are melted and filtered to be reused as new foundations. Our beekeeping methods are entirely sustainable, which means that we will never abuse the hive for the sake of extracting more honey.

Our honey is as pure as can be. Our apiaries are located in remote villages and ecologically preserved areas with no commercial agriculture nearby that could grow GMO crops or use harmful pesticides. The bees that produce our honeydew honey live in a forest preserve in the Strandzha Mountain, where everything that grow is wild.

To prepare our hives for the winter, we feed our bees vitamins and probiotics and brew different herbal teas (like wormwood to prevent nosema) to boost their immune systems. The medicine we use are natural and does not leave any traces in the wax or honey.

Honey contains enzymes, amino acids, vitamins and minerals, which are not resistant to high heat. Our honey is never heated to a temperature that would decrease its nutritional value.

Each jar of honey is single-origin, which means we don’t mix honey across different apiaries. You can see the exact apiary and batch number your honey was harvested from on every label.

When sourcing monofloral honey from other producers, we select micro-regions that produce the highest concentration of a particular monofloral pollen, like an apiary next to an acacia forest, linden forest, or lavender field.
