    Yes. We will NEVER feed the bees sugar during collection, as evidenced in our lab test results which are available upon request. Our honey is 100% raw and unfiltered, which means after our honey is extracted using a centrifuge, it is poured through a strainer to remove hard particles like wax, but not too fine to filter out the pollen. Honey is innately antimicrobial due to its low moisture content, and our honey is never heated to a temperature that would decrease its nutritional value, again as evidenced in our lab test results.
    When bees collect the flower nectar, that they transform into honey, usually the nectar is collected by variety of plants, that is called wildflower honey. During certain times of the year and in certain regions there are plants that are dominant and so the nectar from those plants has higher concentration in the honey, this can be discovered with pollen lab analysis. For example, to be labeled as linden honey, the pollen analysis needs to show that it is above 30% linden to qualify, but our linden honey actually contains over 50%, so you get a much more potent linden flavor. When sourcing a honey varietal, also called “monofloral honey,” from other producers, we select micro-regions that produce the highest concentration of a particular monofloral pollen, like an apiary next to an acacia forest, linden forest, or lavender field. Our apiary that produces honeydew honey is located in a forest preserve in the EU Protected Strandzha Mountains, where agricultural activity is not even permitted for several kilometers radius.
    A honey varietal, such as our Linden Honey, Acacia Honey, or Honeydew Honey refers to the type of nectar the bees are collecting. There are no added ingredients that may influence the flavor. A super honey, such as our Wildflower Honey with Ginger, includes added healthy ingredients like powdered ginger. All our super-honeys use the highest quality certified ingredients.
    Crystallization is a natural process that happens with all raw honeys. The speed at which different honeys crystallize is based on their natural fructose levels, pollen count, and other factors. For example, acacia honey has extremely low fructose levels and can take up to two years to crystallize while rapeseed honey crystallizes in the honeycomb before it’s even extracted! [TIP] Beware of store-bought honeys that look completely liquid, which can be an indicator that the honey has been pasteurized and therefore stripped of its natural health properties. One texture is not better than the other, and crystallization does not impact the quality of the honey. Some people prefer liquid honey for drizzling while others prefer harder crystallized honey for scooping and spreading. For example, we prefer to use crystallized honey for our infusions that incorporate powdered spices to prevent separation. If you want to decrystallize your honey, we recommend you heat your honey below 40℃ in a double boiler to avoid destroying the honey’s natural micronutrients and enzymes.
    Our apiaries are located in clean surroundings areas, with no commercial agriculture nearby that could grow GMO crops or use harmful pesticides. Our family’s apiaries are located in the Karlovo, Stara Zagora, and Dimitrovgrad regions. We also work with beekeeping partners whose apiaries are located in micro-regions that produce the highest concentration of a particular monofloral pollen, like our partnering apiary in Polski Trumbesh located next to a linden forest. The apiary that produces our honeydew honey is located in a forest preserve in the EU Protected Strandzha Mountains, where agricultural activity is not even permitted for several kilometers radius.
    Our honey is tested at one of the best food laboratories in Bulgaria, and our lab results are available upon request. For our super honeys, all our added ingredients are of the highest quality and fully traceable.
    Mead is one of the oldest known alcoholic beverages known to mankind, made by fermenting honey with water and yeast. We produce sweet and semi-sweet mead with a twist, available only within Bulgaria.
    We accept all major credit and debit cards, PayPal, Stripe, and bank payments. For orders within Bulgaria, we accept payment upon receival through courier services. You can select your preferred method of payment at checkout.
    We usually ship your order within 1-2 days after it has been received. The delivery times depend entirely on your selected courier service. Usually that is next day delivery in Bulgaria and about 5-7 days for international deliveries.

    In the highly unlikely event that your parcel is damaged, or shows signs of having been tampered with, you should contact us immediately. Please take photos of the damaged box and contents and send them to us so we can work out the best way to resolve the problem.
